In non-ruminants like poultry and swine, phytase activity needs to happen early in the gut, when pH is low and phytate is still soluble. Around pH 4, phytate starts forming insoluble complexes with minerals like calcium, zinc, iron, and copper. By pH 6, most of the phytate is locked in forms animals can’t use.

That’s why phytase activity in the proventriculus and gizzard is critical. If the enzyme acts too late, like in the small intestine, the opportunity to release bound phosphorus has already passed.
